All aspects of production at El Diamante are managed by Patricia Diaz and her mother. Together they oversee every step of the way; from planting saplings to picking only the ripest cherries, from processing the seeds to milling and exporting. Their dedication to their craft is unmatched and it shows in the quality in the cup. Patricia Diaz gives what little spare time she has back to her community and she is loved and adored for doing so.
